Servings
1 serving
Ingredients
For the overnight oats
- ½ cup rolled oats
- ¾ cup unsweetened almond milk
- ⅓ cup Greek yogurt or plant-based yogurt
- 1 teaspoon chia seeds
- ½ teaspoon vanilla extract
- Pinch of salt
Toppings
- ½ cup fresh or frozen raspberries
- 1 tablespoon natural almond butter
- 1 tablespoon toasted sliced almonds
- Optional: 1 teaspoon honey or maple syrup
Instructions
- Add the rolled oats, almond milk, yogurt, chia seeds, vanilla extract, and a pinch of salt to a mason jar or airtight container.
- Stir well until everything is evenly combined.
- Cover and refrigerate for at least 6 hours, or preferably overnight.
- The next morning, give the oats a good stir. If they’re thicker than you’d like, add a splash of almond milk until you reach your preferred consistency.
- Top with the raspberries, a generous spoonful of almond butter, and the toasted sliced almonds. Drizzle with honey or maple syrup if you’d like a little extra sweetness.
Tips
- Use frozen raspberries if you’d like your overnight oats to turn a beautiful pink color.
- Add the sliced almonds just before serving to keep them nice and crunchy.
- For extra protein, choose Greek yogurt or a high-protein plant-based yogurt.
- Store covered in the refrigerator for up to 2 days.
Variations
- Swap the raspberries for strawberries, blueberries, or blackberries.
- Stir in a tablespoon of ground flaxseed or hemp hearts for an extra fiber boost.
- Add a few dark chocolate chips for a more indulgent breakfast.
- Sprinkle with unsweetened shredded coconut for a tropical twist.
