Low-FODMAP yogurt lemon cake
This fresh and fluffy low FODMAP yogurt lemon cake is easy to make and after only 60 minutes you can enjoy this delicious cake. Because the cake is made with rice flour, lactose-free yogurt and vegetable oil, it fits perfectly within the FODMAP diet.
Ingredients Yogurt cake:
- 200 g rice flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 200 g sugar
- 120 ml lactose-free yogurt
- 80 ml vegetable oil (e.g. olive oil or coconut oil)
- 3 eggs
- 1 teaspoon vanilla extract
- Grated zest of 1 lemon
- Optional: powdered sugar
Instructions:
- Preheat the oven to 180°C and grease a cake pan or line it with baking paper.
- In a bowl mix the gluten-free flour, baking powder and salt.
- In another bowl mix the sugar, lactose-free yogurt, vegetable oil, eggs, vanilla extract and grated lemon zest.
- Gradually add the dry ingredients to the wet ingredients and mix well until everything is well combined.
- Pour the batter into the greased cake pan.
- Bake the cake in the preheated oven for about 30-40 minutes, or until a toothpick comes out clean when you insert it into the center of the cake.
- Remove the cake from the oven and let it cool for 10 minutes.
- Optional: sprinkle the cake with a little powdered sugar before serving.
