Low-FODMAP Kaiserschmarrn

 This recipe offers a delicious, low-FODMAP version of Kaiserschmarrn. Enjoy it for breakfast or dessert! 

Ingredients for 4 servings:   

  • 125 g rice flour  
  • 4 eggs   
  • 125 ml milk (you can make the milk lactose free with the lactase drops)  
  • 50 g sugar   
  • 1 teaspoon vanilla extract   
  • 1 teaspoon baking powder   
  • A pinch of salt   
  • 50 grams raisins (leave the raisins out if you are fructan intolerant)  
  • Vegetable oil for baking    
  • Powdered sugar 

Instructions  

  1. In a large bowl, mix together the rice flour, sugar, baking powder and a pinch of salt.   
  2. Add the eggs, lactose-free milk and vanilla extract and mix until the batter is smooth. 
  3. Finally, spoon the raisins into the batter.   
  4. Heat a frying pan with a little vegetable oil over medium-high heat.   
  5. Pour some of the batter into the pan and fry until the bottom is golden brown but the top is still slightly runny. Using a spatula, divide the dough into 4 equal pieces and flip all the pieces with the spatula. Bake this side as well until golden brown.   
  6. Then use a spatula to tear the Kaiserschmarrn into small pieces.   
  7. Repeat this process with the rest of the batter.   
  8. Serve the warm Kaiserschmarrn with powdered sugar
