Low-FODMAP Kaiserschmarrn

This recipe offers a delicious, low-FODMAP version of Kaiserschmarrn. Enjoy it for breakfast or dessert!
Ingredients for 4 servings:
- 125 g rice flour
- 4 eggs
- 125 ml milk (you can make the milk lactose free with the lactase drops)
- 50 g sugar
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- A pinch of salt
- 50 grams raisins (leave the raisins out if you are fructan intolerant)
- Vegetable oil for baking
- Powdered sugar
Instructions
- In a large bowl, mix together the rice flour, sugar, baking powder and a pinch of salt.
- Add the eggs, lactose-free milk and vanilla extract and mix until the batter is smooth.
- Finally, spoon the raisins into the batter.
- Heat a frying pan with a little vegetable oil over medium-high heat.
- Pour some of the batter into the pan and fry until the bottom is golden brown but the top is still slightly runny. Using a spatula, divide the dough into 4 equal pieces and flip all the pieces with the spatula. Bake this side as well until golden brown.
- Then use a spatula to tear the Kaiserschmarrn into small pieces.
- Repeat this process with the rest of the batter.
- Serve the warm Kaiserschmarrn with powdered sugar
