Creamy Tomato Pasta with Spinach

Lactose-Free with Intoleran Lactase Drops
Serves 4 | Preparation time: approx. 25 minutes

This creamy tomato pasta with spinach is full of flavour and easy to make. With Intoleran Lactase Drops, you can use regular cream and make it lactose-free. That way, you can still enjoy a deliciously rich and creamy pasta sauce.

Ingredients

  • 300 g penne pasta
  • 250 ml single cream
  • Intoleran Lactase Drops
  • 2 tbsp olive oil
  • 2 cloves garlic, finely chopped
  • 2 tbsp tomato purée
  • 150 g fresh spinach
  • 50 g grated Parmesan cheese*
  • 1 tsp Italian herbs
  • Chilli flakes, to taste
  • Salt and pepper
  • Fresh basil

*Due to the ageing process, Parmesan cheese is naturally very low in lactose. If preferred, choose a variety specifically labelled lactose-free.

Preparing the Cream with Lactase Drops

Want to make the cream lactose-free ahead of time? Add 1 drop of Intoleran Lactase Drops to 250 ml of cream, mix well and refrigerate for 24 hours. This gives the lactase enzyme time to break down the lactose.

Don’t want to wait 24 hours? You can also add the Lactase Drops to the cream just before using it. In that case, use 1 drop per 50 ml of cream. For the 250 ml of cream in this recipe, you’ll need 5 drops.

Method

  1. Cook the penne according to the packet instructions. Reserve a small cup of pasta water before draining.
  2. Heat the olive oil in a large frying pan. Gently fry the garlic, then add the tomato purée and Italian herbs. Cook for about 1 minute.
  3. Pour in the cream prepared with Lactase Drops and stir until you have a smooth, creamy tomato sauce.
  4. Add the spinach and cook until wilted.
  5. Stir the Parmesan into the sauce. If needed, add a splash of pasta water for an extra creamy consistency. Season with salt, pepper and chilli flakes to taste.
  6. Add the cooked pasta to the sauce and stir until everything is well combined.
  7. Divide between plates and garnish with fresh basil and, if desired, a little extra Parmesan.
